Mango Tart

This simple yet refreshing mango tart is perfect for the summer season. It’ll cool you down when you eat it, but best of all you don’t even need to turn on your oven!



  • 1 1/2 cup oats
  • 3/4 cup almond flour
  • 12 dried prunes
  • 3 tbsp coconut oil


  • 2 cups almond milk
  • 1/2 cup coconut milk
  • 1 cup ripe mangoes
  • 2 tbsp honey
  • 1 tbsp corn starch
  • 2 tbsp gelatine



  1. Place the oats and almond flour in a food processor and blend until combined
  2. Add dried prunes and coconut oil into the food processor and until it forms a sticky dough, adding in water to adjust the consistency
  3. Press the dough into a tart pan and let in chill in the fridge while you make the filling


  1.   Blend the almond milk, coconut milk, and mangoes in a food processor. When it is smooth, blend in the honey
  2. Strain the mixture and in a separate bowl, mix the gelatin with 1/2 cup of the mango mixture
  3. Pour the strained mixture into a saucepan and add in the now congealed gelatin as well as the corn starch, heating the mixture until it becomes thick
  4. Remove the sauce pan from the heat and let the filling cool down a bit before pouring it into the tart shell
  5. Bring the filled tart shell to room temperature before storing it in the fridge overnight
