S’mores Cupcakes

A perfect cupcake for a chocolate lover and for anyone really. The bitterness from the chocolate cupcake is balanced out by the sweetness of the marshmallow frosting making them a perfect pair.



  • 1 3/4 cup all purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 salt
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 3/4 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup almond milk
  • Marshmallow Frosting:
    2 egg whites
    1/2 cup granulated sugar
    1/4 tsp cream of tartar



  1. Preheat your oven to 350° F or 180° C
  2. In a bowl, sift the flour, baking soda, baking powder, and salt then mix them well.
  3. In another bowl, first combine the cocoa powder and sugar, then add in the oil, eggs, and vanilla extract, mixing on a high speed.
  4. On a low speed, mix in your dry ingredients and milk into the chocolate mixture alternating until you have one smooth batter.
  5. Fill a 12 hole cupcake tray and bake for 25 minutes or until a toothpick inserted into the cupcake comes out clean.
  • Marshmallow Frosting:
    In a heat safe bowl, add in all the ingredients, then set the bowl over a saucepan with 2 cm of boiling water.
    Stir the egg mixture with a whisk until all the sugar particles melt and you can no longer feel it in between your fingers when you pick some of the mixture up, being careful not to burn yourself.
    Take the egg whites of the heat and whip them on high speed until they form thick and glossy peaks.
    Fill a piping bag with the frosting and pipe onto the cooled cupcakes.
