Brownie Cheesecake Bites

A creamy chocolate dessert that melts in your mouth with three delicious layers. A brownie base, a Nutella cheesecake and a silky chocolate ganache.

  • 1/4 cup butter, softened
  • 1/2 cup granulated sugar
  • 1 egg
  • 1/4 cup cocoa powder
  • 3/4 cup all purpose flour

  • 1 (8 oz) package of cream cheese, softened
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup granulated sugar
  • 1/2 cup Nutella

Chocolate Ganache

  • 3/4 cup milk chocolate chocolate
  • 1 1/4 cup heavy whipping cream

  1. Preheat the oven to 350°F or 175°C and grease a 9 inch springform pan.
  2. In a large mixing bowl, cream the butter and sugar together until fluffy. Add in the egg and beat until fully combined. Then sift in the cocoa powder and flour and mix until there are no more streaks of flour.
  3. Spread the brownie batter into he prepared pan with a off set spatula. Then bake in the preheated oven for 12 minutes. Once it’s done baking, take it out of the oven and let it cool down.
  4. In the mean time, beat the cream cheese until soft and fluffy then beat in the sugar. Once the sugar is combined, beat in the egg and vanilla extract. Then remove some of the cheesecake batter and mix it with the Nutella to loosen it a bit. Then fold in the Nutella mixture back into the cheesecake batter.
  5. Pour this batter over the baked brownies and bake again in the oven for 15 minutes.
  6. Once the cheesecake is done baking, let it cool down completely. In a heat safe bowl, melt the chocolate and heavy cream together. Either in a microwave or over a bain-marie.
  7. Once the ganache has cooled down a bit, poor it over the cheesecake brownie and let it set in the fridge for at least 4 hours or overnight.
  8. Run a knife around the outer edge of the pan, then release spring form pan and cut the dessert into squares.
  9. Serve the dessert cold with an optional sprinkle of sea salt. It can be stored in an air tight container in the fridge for up to a week.
