Chia Seed Pudding

A one bowl recipe that’s also free of refined sugars and vegan friendly. It’s super quick to make and tastes delicious. It has the creaminess from the coconut milk and also a rich chocolate flavour.

Chia seeds are known to be a superfood being packed with fiber, protein, omega-3 fatty acids and much more. Chia seeds come in two different colours and it doesn’t really matter which one you use, but I used black chia seeds.

This recipe is also very customizable, if you don’t like chocolate, simply replace the cocoa powder with 1 tsp of vanilla extract. You can also swap out the coconut milk and water for 1 cup of almond milk or any type of milk you like. The fruit can also be changed to match your preferences.

If you’re vegan, you can simply replace the honey with agave or maple syrup. You can also adjust the amount of sweetener to your liking. Take into account how you plan to serve the pudding. If you’re going to add fruits into it, don’t add to much sweetener, unless you’re okay with it being really sweet.

  • 1/3 cup chia seeds
  • 1/4 cup coconut milk
  • 3/4 cup water
  • 1 tbsp honey or agave
  • 1 tbsp cocoa powder
  • fresh cherries
  • chocolate chips
  1. In a large bowl mix all the ingredients until it’s smooth and there are no longer any lumps of chia seeds stuck together.
  2. Cover the bowl with plastic wrap and refrgerate for at least six hours or overnight.
  3. Once it’s set, serve cold in cups and top with garnish
